- 8 oz linguine pasta
- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the linguine according to package instructions. Drain and set aside.
- Season the chicken breasts generously with Cajun seasoning.
- In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook for 6-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes before slicing.
- In that same skillet, add minced garlic and sauté for 1-2 minutes, until fragrant.
- Pour in the heavy cream, stirring to combine, then gradually stir in the Parmesan cheese until melted and the sauce is creamy.
- Add the cooked linguine to the skillet, tossing to coat it thoroughly in the creamy sauce. Season with salt and pepper to taste.
- Serve the creamy linguine topped with sliced Cajun chicken and a sprinkle of chopped parsley.
Notes
For a vegan variation, substitute half-and-half for the heavy cream or use nutritional yeast in place of Parmesan.
