- 2 pounds potatoes, peeled and cubed
- 1 cup onions, chopped
- 1 cup carrots, diced
- 1 cup peas (frozen or fresh)
- 2 cups vegetable broth
- 2 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- 1 pie crust (store-bought or homemade)
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the potatoes in a large pot until tender, around 15-20 minutes. Drain and mash with butter, salt, pepper, thyme, and garlic powder.
- In a skillet, sauté the onions and carrots in a bit of oil until softened, about 5-7 minutes. Add the peas and vegetable broth, then simmer for another 5 minutes.
- Combine the sautéed vegetables with the mashed potatoes until evenly mixed.
- Roll out the pie crust and fit it into a pie dish. Pour the potato and vegetable mixture into the crust.
- Cover with another layer of pie crust, seal the edges, and make several slits on top for steam to escape.
- Brush the top with a beaten egg for a golden finish.
- Bake in the oven for 30-35 minutes, or until the top is golden brown.
- Once baked, let it cool for a few minutes before serving.
Notes
For a vegan option, replace the butter with olive oil and omit the egg wash.
