Description

Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 cup onions, chopped
  • 1 cup carrots, diced
  • 1 cup peas (frozen or fresh)
  • 2 cups vegetable broth
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 pie crust (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in a large pot until tender, around 15-20 minutes. Drain and mash with butter, salt, pepper, thyme, and garlic powder.
  3. In a skillet, sauté the onions and carrots in a bit of oil until softened, about 5-7 minutes. Add the peas and vegetable broth, then simmer for another 5 minutes.
  4. Combine the sautéed vegetables with the mashed potatoes until evenly mixed.
  5. Roll out the pie crust and fit it into a pie dish. Pour the potato and vegetable mixture into the crust.
  6. Cover with another layer of pie crust, seal the edges, and make several slits on top for steam to escape.
  7. Brush the top with a beaten egg for a golden finish.
  8. Bake in the oven for 30-35 minutes, or until the top is golden brown.
  9. Once baked, let it cool for a few minutes before serving.

Notes

For a vegan option, replace the butter with olive oil and omit the egg wash.
