- 2 1/4 cups all-purpose flour (plus extra for dusting)
- 1 packet (2 1/4 tsp) instant yeast
- 3/4 cup warm whole milk
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1 large egg, room temperature
- 1/2 tsp salt
- 5 slices thick-cut bacon, cooked crispy and chopped
- 1/3 cup brown sugar, packed
- 2 tbsp unsalted butter, softened
- 2 tsp ground cinnamon
- 1/2 tsp smoked paprika (optional)
- Pinch of black pepper
- 1/2 cup pure maple syrup
- 1 cup powdered sugar, sifted
- 2 tbsp unsalted butter, melted
- 1/8 tsp salt
- 1–2 tbsp milk (adjust for glaze thickness)
Instructions
- In a large bowl, whisk together warm milk, granulated sugar, and instant yeast. Let it sit for about 5 minutes until foamy.
- Add melted butter, egg, and salt, stirring until combined.
- Gradually incorporate the flour, mixing until a soft dough forms.
- Knead the dough by hand for 6-8 minutes or in a stand mixer for 4-5 minutes until smooth and elastic.
- Place the dough into a lightly greased bowl, cover it, and allow it to rise in a warm spot for approximately 1 hour, or until doubled in size.
- As the dough rises, cook bacon until crispy, drain, and chop finely. In a medium bowl, mix together brown sugar, softened butter, cinnamon, smoked paprika, and black pepper. Stir in the chopped bacon.
- Once the dough has risen, punch it down and turn it onto a lightly floured surface. Roll it out into a 14×9-inch rectangle, about 1/4-inch thick.
- Spread the filling evenly over the dough, leaving a 1/2-inch border. Roll the dough tightly from the longer side, pinching the seam to seal.
- Slice the log into 9 even rolls using a sharp knife or dental floss. Place in a greased 9×13-inch baking dish, cut sides up.
- Cover the rolls and let them rise for another 30-40 minutes in a warm place.
- Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until they are golden brown and cooked through.
- For the glaze, whisk together maple syrup, powdered sugar, melted butter, salt, and milk until you achieve a thick but pourable consistency.
- Generously pour the glaze over the warm rolls. Allow them to cool for 10-15 minutes before serving. Optionally, sprinkle reserved bacon bits on top for an extra crunch.
Notes
Serve warm with scrambled eggs or a salad. For a complete meal, drizzle with extra maple syrup and pair with coffee or iced tea.
