Delightful Scottish potato scones that are warm, comforting, and incredibly easy to make.
Ingredients

- 500 g potatoes (approximately 5 small, peeled and diced)
- 30 g butter (1 oz, salted)
- 1 cup self-raising flour (150 g / 5.3 oz; can substitute with 1 tsp baking powder)
- 1 tbsp butter (for cooking)
Instructions
- Boil the peeled and diced potatoes in salted water for about 15-20 minutes or until tender. Drain and mash them well.
- In a mixing bowl, combine the warm mashed potatoes with 30 g of butter, mixing until smooth and creamy.
- Gradually add the self-raising flour into the potato mixture, stirring until a dough forms. If the dough feels too sticky, sprinkle in some more flour.
- Lightly flour your work surface and turn out the dough. Roll it out to about 1-1.5 cm thick.
- Use a round cutter (or a glass) to cut out scone shapes. Gather any scraps, knead them gently, and cut more shapes.
- Heat a tablespoon of butter in a frying pan over medium heat. Cook the scones for about 5 minutes on each side, or until they are golden brown.
- Remove from the heat and allow them to cool slightly before serving.
Notes
These scones can be served warm with butter or paired with poached eggs and smoked salmon.
