Description

Delightful Scottish potato scones that are warm, comforting, and incredibly easy to make.


Ingredients

  • 500 g potatoes (approximately 5 small, peeled and diced)
  • 30 g butter (1 oz, salted)
  • 1 cup self-raising flour (150 g / 5.3 oz; can substitute with 1 tsp baking powder)
  • 1 tbsp butter (for cooking)

Instructions

  1. Boil the peeled and diced potatoes in salted water for about 15-20 minutes or until tender. Drain and mash them well.
  2. In a mixing bowl, combine the warm mashed potatoes with 30 g of butter, mixing until smooth and creamy.
  3. Gradually add the self-raising flour into the potato mixture, stirring until a dough forms. If the dough feels too sticky, sprinkle in some more flour.
  4. Lightly flour your work surface and turn out the dough. Roll it out to about 1-1.5 cm thick.
  5. Use a round cutter (or a glass) to cut out scone shapes. Gather any scraps, knead them gently, and cut more shapes.
  6. Heat a tablespoon of butter in a frying pan over medium heat. Cook the scones for about 5 minutes on each side, or until they are golden brown.
  7. Remove from the heat and allow them to cool slightly before serving.

Notes

These scones can be served warm with butter or paired with poached eggs and smoked salmon.
