Description

Delicious and easy-to-make keto cream cheese cookies that are low in carbs and high in flavor.


Ingredients

  • 3/4 cup blanched almond flour
  • 1.5 tablespoons coconut flour
  • 1/2 cup granulated sweetener (erythritol)
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 4 ounces full fat cream cheese
  • 1 large egg
  • 1.5 teaspoons vanilla extract

Instructions

  1. Cream the cream cheese until smooth.
  2. Add the egg and mix until combined.
  3. In a separate bowl, mix almond flour, coconut flour, baking powder, and salt.
  4. Combine wet and dry mixtures until fully incorporated.
  5. Chill the dough for at least one hour.
  6. Preheat oven to 350°F (175°C).
  7. Scoop and bake cookies for about 15 minutes until golden.
  8. Cool on baking sheet for at least 15 minutes and dust with powdered sweetener.

Notes

For added flavor, consider using flavored extracts or folding in sugar-free chocolate chips.
