Ingredients

- 3/4 cup blanched almond flour
- 1.5 tablespoons coconut flour
- 1/2 cup granulated sweetener (erythritol)
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 4 ounces full fat cream cheese
- 1 large egg
- 1.5 teaspoons vanilla extract
Instructions
- Cream the cream cheese until smooth.
- Add the egg and mix until combined.
- In a separate bowl, mix almond flour, coconut flour, baking powder, and salt.
- Combine wet and dry mixtures until fully incorporated.
- Chill the dough for at least one hour.
- Preheat oven to 350°F (175°C).
- Scoop and bake cookies for about 15 minutes until golden.
- Cool on baking sheet for at least 15 minutes and dust with powdered sweetener.
Notes
For added flavor, consider using flavored extracts or folding in sugar-free chocolate chips.
