- 14 oz chicken or turkey sausage, sliced ½-inch thick
- 2 medium sweet potatoes, peeled and cubed (½-inch)
- 2 cups broccoli florets (½-inch)
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- ¼ cup honey
- ¼ cup low-sodium soy sauce (or coconut aminos)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Arrange the sliced sausage, cubed sweet potatoes, and broccoli on the sheet pan, spreading them out in a single layer.
- In a small saucepan, melt the butter over medium heat. Sauté the minced garlic for 30–60 seconds until fragrant.
- Stir in the honey, soy sauce (or coconut aminos), vinegar, salt, and pepper; let it simmer for 2–3 minutes.
- Pour the honey garlic sauce over the sausage and veggies, and toss well to evenly coat everything.
- Roast in the oven for 25–30 minutes, stirring halfway through, until the sweet potatoes are tender and the edges are caramelized.
- Sprinkle the dish with fresh parsley and serve warm.
Notes
For best results, avoid overcrowding the pan to ensure proper roasting. Prep your veggies in advance for quicker cooking.
