- 14 oz chicken or turkey sausage, sliced 1/2-inch thick
- 2 medium sweet potatoes, peeled and cubed (1/2-inch)
- 2 cups broccoli florets (1/2-inch)
- 1 tablespoon unsalted butter (or olive oil)
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce (or coconut aminos)
- 1 tablespoon apple cider vinegar
- Kosher salt and black pepper, to taste
- 2 tablespoons minced fresh parsley
Instructions
- Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Spread the sliced sausage, cubed sweet potatoes, and broccoli on the sheet pan in a single layer.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 30–60 seconds until fragrant.
- Stir in the honey, soy sauce, apple cider vinegar, salt, and pepper. Let the sauce simmer for 2–3 minutes.
- Pour the sauce over the sausage and veggies; toss to coat thoroughly.
- Roast everything in the oven for 25–30 minutes, stirring once midway, until the sweet potatoes are tender and caramelized around the edges.
- Sprinkle the dish with fresh parsley before serving warm.
Notes
Store leftovers in an airtight container for up to 3-4 days. Reheat in the oven or microwave.
