A quick and flavorful chicken stir fry with zucchini, perfect for weeknight dinners.
Ingredients

- 2 chicken breasts, sliced
- 2 zucchinis, sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced chicken breasts and cook until they’re no longer pink, about 5-7 minutes.
- Stir in the minced garlic and sauté for another minute until fragrant.
- Add the sliced zucchinis to the skillet and stir-fry for about 5 minutes, until tender yet crisp.
- Pour the soy sauce over the chicken and zucchini, stirring everything together to coat.
- Season with salt, pepper, and red pepper flakes if you like a little heat.
- Cook for another 2 minutes, then serve hot.
Notes
Serve over jasmine rice or quinoa for added texture. Leftovers can be stored in the fridge for 3-4 days.
