Description

A quick and flavorful chicken stir fry with zucchini, perfect for weeknight dinners.


Ingredients

  • 2 chicken breasts, sliced
  • 2 zucchinis, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced chicken breasts and cook until they’re no longer pink, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for another minute until fragrant.
  4. Add the sliced zucchinis to the skillet and stir-fry for about 5 minutes, until tender yet crisp.
  5. Pour the soy sauce over the chicken and zucchini, stirring everything together to coat.
  6. Season with salt, pepper, and red pepper flakes if you like a little heat.
  7. Cook for another 2 minutes, then serve hot.

Notes

Serve over jasmine rice or quinoa for added texture. Leftovers can be stored in the fridge for 3-4 days.
