Description

Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Sear the chicken in a hot skillet until golden brown on both sides.
  2. In your slow cooker, combine the seared chicken, diced carrots, celery, onion, potatoes, minced garlic, and bay leaves.
  3. Sprinkle dried thyme, salt, and pepper over the top, and stir to combine.
  4. Pour in the chicken broth. If using flour for thickening, whisk it with a little broth before adding it, or sprinkle it over ingredients and stir.
  5. Cover the slow cooker and cook on low for 6–8 hours, or on high for 3–4 hours until tender.
  6. Before serving, remove the bay leaves, check seasoning, and garnish with fresh parsley if desired.

Notes

Perfect with crusty bread or biscuits. Leftovers can be refrigerated for 3-4 days or frozen for later use.
