Description

A hearty and comforting slow cooker casserole featuring ground beef, beans, and cheesy goodness, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups diced potatoes (fresh or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup corn (canned or frozen)
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until browned. Drain excess fat.
  2. In the slow cooker, combine the browned beef, black beans, diced potatoes, cream of mushroom soup, corn, and taco seasoning. Season with salt and pepper.
  3. Gently mix all the ingredients until well combined.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, sprinkle the shredded cheese on top, cover, and allow it to melt.
  6. Give it a good stir and enjoy it warm!

Notes

Feel free to substitute ground beef for turkey or plant-based protein for a lighter or vegetarian version. Serve with sour cream and fresh herbs for added flavor.
