Ingredients

- 1 pound ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups diced potatoes (fresh or frozen)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup corn (canned or frozen)
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat until browned. Drain excess fat.
- In the slow cooker, combine the browned beef, black beans, diced potatoes, cream of mushroom soup, corn, and taco seasoning. Season with salt and pepper.
- Gently mix all the ingredients until well combined.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, sprinkle the shredded cheese on top, cover, and allow it to melt.
- Give it a good stir and enjoy it warm!
Notes
Feel free to substitute ground beef for turkey or plant-based protein for a lighter or vegetarian version. Serve with sour cream and fresh herbs for added flavor.
