- 2 boneless skinless chicken breasts
- 1 (11-oz) can of corn, drained
- 1 (15-oz) can of black beans, drained and rinsed
- 1 (10-oz) can of diced tomatoes with green chilies, undrained
- 2 cups of chicken broth
- 1 cup of cooked, chopped bacon
- 1 (1-oz) package of ranch dressing mix
- 1 tsp cumin
- 1 Tbsp chili powder
- 1 tsp onion powder
- 1 (8-oz) package of cream cheese
- 1 cup of shredded cheddar cheese
Instructions
- Place the chicken breasts at the bottom of your slow cooker.
- Dump in the corn, black beans, diced tomatoes, and chicken broth.
- Sprinkle in the ranch dressing mix, cumin, chili powder, and onion powder. Mix well!
- Put the cream cheese on top of the chicken.
- Cover with the lid and set your slow cooker on LOW for 6-8 hours.
- Once done, remove the chicken, shred it with two forks, and add it back to the pot. Finally, stir in the shredded cheddar cheese until melted and well combined.
Notes
Top with sour cream, fresh cilantro, and sliced jalapeños. Serve alongside crispy tortilla chips, rice, or quinoa.
