- 2 lbs green beans (fresh or frozen, trimmed)
- 1 small sweet onion, sliced
- ½ lb thick-cut bacon, cut into 1½” pieces
- 1 lb baby potatoes, halved or quartered
- 2 garlic cloves, minced
- 1 tsp kosher salt
- ½ tsp black pepper
- 3 cups low-sodium chicken broth
Instructions
- Prepare your ingredients by trimming green beans, slicing onions, and mincing garlic.
- Layer the green beans, potatoes, onions, garlic, and bacon in the slow cooker.
- Pour in the chicken broth and sprinkle with salt and pepper.
- Give everything a good stir to combine.
- Cover it up and set your cooker to high (3-4 hours) or low (6-7 hours).
- Once everything is tender, serve in bowls with pot likker over the top.
Notes
Substitute bacon for turkey bacon or use vegetable broth for a vegetarian option. Consider adding Worcestershire sauce or smoked paprika for additional flavor.
