Ingredients

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup honey
  • 1/3 cup low sodium soy sauce
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch (optional)
  • 2 tablespoons water (optional)
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)

Instructions

  1. Lightly season the chicken with salt and pepper on both sides.
  2. Whisk together the honey, soy sauce, ketchup, minced garlic, ginger, red pepper flakes, and vinegar in a small bowl.
  3. Place the chicken in the slow cooker. Pour the sauce over the chicken, making sure all pieces are thoroughly coated.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender.
  5. (Optional) For a thicker sauce, remove the chicken after cooking. Combine cornstarch with water to make a slurry, then add it to the sauce in a saucepan. Simmer for 2-3 minutes until thickened.
  6. Place the chicken back into the slow cooker or drizzle the thickened sauce over it.
  7. Garnish with sesame seeds and chopped green onions before serving.

Notes

Marinate the chicken in the sauce for a couple of hours before cooking for deeper flavor. This dish pairs well with rice or noodles.
