Description

A simple and delicious slow-cooked chicken dish flavored with lemon and fresh herbs, served over fluffy rice.


Ingredients

  • 4 chicken breasts
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 2 cups water
  • Fresh parsley (for garnish)

Instructions

  1. In your slow cooker, combine the lemon juice, zest, olive oil, minced garlic, chopped rosemary, thyme, and a pinch of salt and pepper.
  2. Add the chicken breasts, making sure they’re well coated in the lemony mixture.
  3. Pour the chicken broth over the chicken to keep it moist while cooking.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken reaches an internal temperature of 165°F (75°C) and is tender.
  5. About 30 minutes before serving, stir in the rice and add the water. Mix well to combine.
  6. Cover the slow cooker again and let it cook until the rice has absorbed the liquid and is fluffy.
  7. Before serving, sprinkle with fresh parsley for a pop of color and added freshness.

Notes

Letting the chicken marinate overnight can amplify the flavor. You can also substitute fresh herbs with dried varieties, reducing the amount used.
