A simple and delicious slow-cooked chicken dish flavored with lemon and fresh herbs, served over fluffy rice.
Ingredients

- 4 chicken breasts
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 tablespoon fresh rosemary (chopped)
- 1 tablespoon fresh thyme (chopped)
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup long-grain rice
- 2 cups water
- Fresh parsley (for garnish)
Instructions
- In your slow cooker, combine the lemon juice, zest, olive oil, minced garlic, chopped rosemary, thyme, and a pinch of salt and pepper.
- Add the chicken breasts, making sure they’re well coated in the lemony mixture.
- Pour the chicken broth over the chicken to keep it moist while cooking.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken reaches an internal temperature of 165°F (75°C) and is tender.
- About 30 minutes before serving, stir in the rice and add the water. Mix well to combine.
- Cover the slow cooker again and let it cook until the rice has absorbed the liquid and is fluffy.
- Before serving, sprinkle with fresh parsley for a pop of color and added freshness.
Notes
Letting the chicken marinate overnight can amplify the flavor. You can also substitute fresh herbs with dried varieties, reducing the amount used.
