- 4 chicken breasts
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 1 cup rice
Instructions
- Place chicken breasts in a slow cooker.
- In a bowl, mix together lemon juice, lemon zest, olive oil, garlic, thyme, oregano, salt, and black pepper. Pour this over the chicken.
- Pour the chicken broth into the slow cooker.
- Cover and set on low for about 4-6 hours.
- About 20 minutes before serving, stir in the rice, making sure it’s evenly distributed.
- Cook until the rice is tender and has absorbed the juices.
- Scoop into bowls or onto plates and enjoy warm.
Notes
For a delightful meal, consider serving with a green salad or roasted vegetables. Searing the chicken before cooking adds extra flavor.
