Ingredients

  • 4 chicken breasts
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup rice

Instructions

  1. Place chicken breasts in a slow cooker.
  2. In a bowl, mix together lemon juice, lemon zest, olive oil, garlic, thyme, oregano, salt, and black pepper. Pour this over the chicken.
  3. Pour the chicken broth into the slow cooker.
  4. Cover and set on low for about 4-6 hours.
  5. About 20 minutes before serving, stir in the rice, making sure it’s evenly distributed.
  6. Cook until the rice is tender and has absorbed the juices.
  7. Scoop into bowls or onto plates and enjoy warm.
