Description

A creamy and flavorful slow cooker dish that combines the tastes of street corn with tender chicken, perfect for busy weeknights or festive gatherings.


Ingredients

  • 2 lbs Boneless Chicken Breasts
  • 2 cups Corn (frozen or fresh)
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese
  • 1 Lime (juiced)
  • 2 cloves Garlic (minced)
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (optional)

Instructions

  1. Place the boneless chicken breasts at the bottom of your slow cooker.
  2. Sprinkle the minced garlic over the chicken.
  3. Add the corn, chili powder, smoked paprika, onion powder, and lime juice.
  4. Cut the cream cheese into small chunks and place it on top of the mixture.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender.
  6. About 30 minutes before serving, stir in the Cotija cheese.
  7. Once fully cooked, shred the chicken in the cooker, mixing all ingredients well.
  8. Garnish with fresh cilantro before serving.

Notes

For a creamier texture, stir in extra cream cheese at the end. Use pre-cooked rotisserie chicken for quicker preparation.
