- 2 lbs Boneless Chicken Breasts
- 2 cups Corn (frozen or fresh)
- 4 oz Cream Cheese
- 1/3 cup Cotija Cheese
- 1 Lime (juiced)
- 2 cloves Garlic (minced)
- 1/2 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Onion Powder
- Fresh Cilantro (optional)
Instructions
- Place the boneless chicken breasts at the bottom of your slow cooker.
- Sprinkle the minced garlic over the chicken.
- Add the corn, chili powder, smoked paprika, onion powder, and lime juice.
- Cut the cream cheese into small chunks and place it on top of the mixture.
- Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender.
- About 30 minutes before serving, stir in the Cotija cheese.
- Once fully cooked, shred the chicken in the cooker, mixing all ingredients well.
- Garnish with fresh cilantro before serving.
Notes
For a creamier texture, stir in extra cream cheese at the end. Use pre-cooked rotisserie chicken for quicker preparation.
