- 2 tablespoons unsalted butter
- 2 large yellow onions, thinly sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces smoked Gouda cheese, shredded
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 clove garlic, minced
- 1 tablespoon fresh chives, chopped (for garnish)
Instructions
- Melt the butter in a large skillet over medium-low heat.
- Add the sliced onions, salt, and pepper. Stir occasionally, cooking for 30-40 minutes until the onions are deeply golden brown and caramelized.
- Preheat your oven to 375°F (190°C).
- Combine the shredded smoked Gouda, softened cream cheese, sour cream, mayonnaise, and minced garlic in a large mixing bowl. Mix until well combined.
- Fold in the caramelized onions gently.
- Transfer the mixture to a small baking dish.
- Bake for 20-25 minutes, or until the dip is bubbly and lightly golden on top.
- Garnish with freshly chopped chives before serving.
Notes
Serve with fresh baguette slices, tortilla chips, or veggie sticks. Leftovers can be stored in the fridge for up to three days.
