  • 2 tablespoons poultry seasoning
  • 12 tablespoons Creole or Cajun seasoning
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon celery salt
  • 1 tablespoon monosodium glutamate (Accent), optional
  • 1 large onion, sliced
  • 1 bell pepper, sliced
  • 0.5 stick unsalted butter, thinly sliced (about 57 grams)
  • Pan drippings from roasted turkey wings
  • 63 grams all-purpose flour (0.5 cup)
  • 710 milliliters chicken stock or broth (3 cups)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 175°C (350°F).
  2. Rinse the turkey wings under cold water, then pat them dry with paper towels.
  3. Mix the poultry seasoning, Creole or Cajun seasoning, onion powder, paprika, garlic powder, celery salt, and monosodium glutamate (if using) in a small bowl. Sprinkle over the turkey wings and toss well to coat.
  4. Coat a large roasting pan with nonstick spray, layer the seasoned wings, and top with sliced onions, bell peppers, and butter.
  5. Cover the pan with aluminum foil and bake for 75 minutes.
  6. Remove the foil and drain the pan drippings into a bowl, keeping the turkey wings warm in the oven.
  7. In a saucepan, heat 120 milliliters of fat from the drippings, whisk in flour, and cook for 2–3 minutes.
  8. Gradually add chicken stock, then stir in remaining drippings, onion powder, and garlic powder. Cook until thickened and season to taste.
  9. Pour the gravy over the turkey wings, cover, and return to the oven for an additional 30–40 minutes until tender.

Notes

Enhance the gravy’s flavor by adding herbs like thyme or parsley, and consider a splash of white wine for acidity.
