- 4 tablespoons unsalted butter, softened
- ⅓ cup packed brown sugar
- 1½ tablespoons all-purpose flour
- 2½ teaspoons ground cinnamon
- Pinch of salt
- 1 cup unsalted butter, softened but cool
- 1⅓ cups granulated sugar
- 1¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2¾ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together the 4 tablespoons of softened butter, brown sugar, 1½ tablespoons of flour, 2½ teaspoons of cinnamon, and a pinch of salt to create the cinnamon filling.
- In a larger bowl, cream together the 1 cup of softened cool butter and granulated sugar until fluffy.
- Add in the vanilla extract, 1 egg, and 1 egg yolk, mixing well to incorporate.
- Gradually add 2¾ cups of flour, baking powder, cornstarch, and ¼ teaspoon of salt, stirring until just combined.
- Scoop the dough using a tablespoon and roll into balls.
- Roll each ball in the cinnamon filling to coat evenly.
- Place the dough balls on a baking sheet lined with parchment paper, about 2 inches apart.
- Bake for 10-12 minutes, until the edges are lightly golden.
- Allow to cool before serving.
