Ingredients

- 1 cup warm water
- 1 packet active dry yeast
- 2 tablespoons granulated sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup baking soda
- 1 large egg
- Kosher salt for topping
- Melted butter (optional)
Instructions
- In a bowl, combine the warm water, active dry yeast, and granulated sugar. Let this mixture sit for about 5 minutes until it becomes frothy.
- In a large mixing bowl, combine the flour and salt. Add the yeast mixture and stir until a dough starts to form.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl and let it rise for 1 hour in a warm spot.
- Preheat your oven to 450°F (230°C).
- Roll the risen dough into long ropes and cut it into bite-sized pieces.
- In a pot, bring 10 cups of water and the baking soda to a boil.
- Dip the pretzel bites into the boiling water one at a time for 30 seconds, then place them on a baking sheet.
- Brush the tops with the beaten egg and sprinkle generously with Kosher salt.
- Bake in the oven for 10-12 minutes or until the bites are golden brown.
Notes
Serve warm with mustard, cheese sauce, or a sweet dip. Store in an airtight container at room temperature for up to 2 days or freeze for up to a month.
