Description

A simple and rewarding recipe for freshly baked sourdough bread with a unique tangy flavor.


Ingredients

  • 4 cups (500g) bread flour or all-purpose flour
  • 1⅔ cups (375g) warm water
  • 1 cup (200g) active sourdough starter
  • 2 teaspoons (10g) salt

Instructions

  1. In a large mixing bowl, combine flour and warm water. Stir until a shaggy dough comes together.
  2. Let the dough rest for 30 minutes.
  3. Add sourdough starter and salt. Mix thoroughly until no dry flour remains.
  4. Cover and let it sit for fermentation at room temperature.
  5. Perform a set of stretch and folds every 30 minutes for the next 2 hours.
  6. After the last fold, cover and let it rise for 6 to 8 hours until doubled and bubbly.
  7. Transfer to a floured surface, shape the dough into a loaf, and place it seam-side up into a proofing basket.
  8. Cover and refrigerate for 8 to 12 hours.
  9. Preheat oven to 450°F (232°C) with a Dutch oven inside.
  10. Turn out the dough onto parchment, score the top, and lower into the Dutch oven.
  11. Bake covered for 20 minutes, then remove the lid and bake uncovered for 25 minutes until golden brown.
  12. Cool completely on a wire rack before slicing.

Notes

Ensure your sourdough starter is active for the best results. Experiment with different types of flour for varied flavors.
