Description

A hearty and comforting blend of classic Southern breakfast flavors wrapped in cheesy enchiladas topped with rich sausage gravy.


Ingredients

  • 4 large flour tortillas
  • 1 pound of breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 2 cups creamy sausage gravy
  • 1/2 cup diced green onions (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the sausage until browned and fully cooked, then set aside.
  3. Whisk the eggs in a bowl, seasoning with salt and pepper. Scramble the eggs in the same skillet until just set, then mix in the cooked sausage and half of the cheese.
  4. Spoon the egg and sausage mixture into each tortilla’s center, roll them up, and place seam side down in a baking dish.
  5. Pour the sausage gravy over the enchiladas, then sprinkle the remaining cheese on top.
  6. Bake for about 20-25 minutes, or until heated through and bubbly.
  7. If desired, sprinkle with diced green onions before serving warm.
