- 4 large flour tortillas
- 1 pound of breakfast sausage
- 6 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 2 cups creamy sausage gravy
- 1/2 cup diced green onions (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the sausage until browned and fully cooked, then set aside.
- Whisk the eggs in a bowl, seasoning with salt and pepper. Scramble the eggs in the same skillet until just set, then mix in the cooked sausage and half of the cheese.
- Spoon the egg and sausage mixture into each tortilla’s center, roll them up, and place seam side down in a baking dish.
- Pour the sausage gravy over the enchiladas, then sprinkle the remaining cheese on top.
- Bake for about 20-25 minutes, or until heated through and bubbly.
- If desired, sprinkle with diced green onions before serving warm.
