- 4 Flour Tortillas
- 1 lb Ground Sausage
- 4 Eggs
- 1 cup Shredded Cheese (Cheddar or Pepper Jack)
- 1 cup Milk
- 1/4 cup Flour
- 1/4 cup Butter
- Salt and Pepper to taste
- Cooking Oil for frying
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground sausage until browned. Drain any excess fat.
- In a separate bowl, whisk together the eggs, salt, and pepper. Add this mixture to the skillet with the sausage, scrambling until the eggs are set.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Spoon the sausage and egg mixture onto each tortilla, sprinkle with cheese, and roll it up tightly.
- Place the rolled tortillas seam-side down in a baking dish.
- For the gravy, melt the butter in a saucepan over medium heat, then stir in the flour to create a roux. Gradually whisk in the milk until the mixture thickens, seasoning with salt and pepper.
- Pour the gravy over the enchiladas and top with additional cheese.
- Bake in the preheated oven for 20-25 minutes until bubbly and golden.
Notes
For a lighter option, substitute ground turkey or plant-based sausage. Garnish with fresh herbs or serve with fresh fruit.
