  • 1 lb Ground Sausage
  • 4 Eggs
  • 1 cup Shredded Cheese (Cheddar or Pepper Jack)
  • 1 cup Milk
  • 1/4 cup Flour
  • 1/4 cup Butter
  • Salt and Pepper to taste
  • Cooking Oil for frying

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground sausage until browned. Drain any excess fat.
  3. In a separate bowl, whisk together the eggs, salt, and pepper. Add this mixture to the skillet with the sausage, scrambling until the eggs are set.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Spoon the sausage and egg mixture onto each tortilla, sprinkle with cheese, and roll it up tightly.
  6. Place the rolled tortillas seam-side down in a baking dish.
  7. For the gravy, melt the butter in a saucepan over medium heat, then stir in the flour to create a roux. Gradually whisk in the milk until the mixture thickens, seasoning with salt and pepper.
  8. Pour the gravy over the enchiladas and top with additional cheese.
  9. Bake in the preheated oven for 20-25 minutes until bubbly and golden.

Notes

For a lighter option, substitute ground turkey or plant-based sausage. Garnish with fresh herbs or serve with fresh fruit.
