Description
A warm and comforting Southern Maple Sweet Potato Casserole that blends sweet potatoes with maple syrup, topped with marshmallows and crunchy pecans.

			- 4 sweet potatoes
 - 1/2 cup maple syrup
 - 1/4 cup brown sugar
 - 1/2 cup raisins
 - 1 tsp ground cinnamon
 - 1/2 tsp ground nutmeg
 - 2 cups marshmallows
 - 1 cup pecans, chopped
 - 2 tbsp butter or vegan alternative (optional)
 
Instructions
- Preheat your oven to 350°F (175°C).
 - Peel and cube the sweet potatoes, then boil them in a pot of water until they are tender (about 15-20 minutes).
 - Drain the sweet potatoes and mash them in a large bowl until smooth.
 - Stir in maple syrup, brown sugar, raisins, cinnamon, and nutmeg until fully combined.
 - Pour the sweet potato mixture into a greased baking dish.
 - Top with a layer of marshmallows.
 - In a separate bowl, mix chopped pecans with melted butter (or vegan alternative). Sprinkle this mixture evenly over the marshmallows.
 - Bake for 30-35 minutes, or until the topping is golden and crispy.
 
Notes
For a twist, swap raisins for dried cranberries or add orange zest for extra flavor. You can also incorporate chopped spinach or different nuts for variety.
