Description

A warm and comforting Southern Maple Sweet Potato Casserole that blends sweet potatoes with maple syrup, topped with marshmallows and crunchy pecans.


Ingredients

  • 4 sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup raisins
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 cups marshmallows
  • 1 cup pecans, chopped
  • 2 tbsp butter or vegan alternative (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil them in a pot of water until they are tender (about 15-20 minutes).
  3. Drain the sweet potatoes and mash them in a large bowl until smooth.
  4. Stir in maple syrup, brown sugar, raisins, cinnamon, and nutmeg until fully combined.
  5. Pour the sweet potato mixture into a greased baking dish.
  6. Top with a layer of marshmallows.
  7. In a separate bowl, mix chopped pecans with melted butter (or vegan alternative). Sprinkle this mixture evenly over the marshmallows.
  8. Bake for 30-35 minutes, or until the topping is golden and crispy.

Notes

For a twist, swap raisins for dried cranberries or add orange zest for extra flavor. You can also incorporate chopped spinach or different nuts for variety.
