  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

A warm and comforting pasta dish that combines earthy spinach, sun-dried tomatoes, and a luscious cream sauce.

Ingredients

Scale
  • 8 ounces of spaghetti
  • 2 cups of fresh spinach, roughly chopped
  • 1 cup of sun-dried tomatoes, chopped
  • 1 cup of heavy cream
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • ½ cup of grated Parmesan cheese
  • ½ teaspoon of red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. Sauté the garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until fragrant.
  3. Add the spinach and tomatoes: Incorporate the chopped spinach and chopped sun-dried tomatoes into the skillet. Cook until the spinach wilts, which should take about 2-3 minutes.
  4. Make the cream sauce: Pour in the heavy cream and reduce the heat to low. Stir well to combine with the sautéed vegetables.
  5. Season the sauce: Add the grated Parmesan cheese, red pepper flakes, salt, and pepper. Mix until the cheese melts and the sauce thickens slightly.
  6. Combine with spaghetti: Toss the cooked spaghetti in the skillet, ensuring it is well coated with the creamy sauce.
  7. Let it rest: Allow the dish to sit for a minute to let the flavors meld together.
  8. Serve: Plate the pasta hot, and garnish with fresh basil if desired. Enjoy with loved ones!

Notes

For a lighter version, substitute heavy cream with half-and-half or use dairy-free alternatives. Leftovers can be refrigerated for up to 3 days.
