- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup cinnamon sugar (for topping)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until blended.
- Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined—don’t overmix!
- Heat a non-stick skillet over medium heat and lightly grease it.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until you see bubbles forming on the surface, then flip carefully and cook the other side until golden brown.
- Remove from the skillet and immediately sprinkle with cinnamon sugar while warm.
- Repeat with the remaining batter and serve warm!
Notes
For fluffier pancakes, avoid overmixing the batter; some lumps are okay. Let the batter rest for 5–10 minutes before cooking for a lighter texture.
