Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar (for topping)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until blended.
  3. Pour the wet ingredients into the bowl of dry ingredients and stir gently until just combined—don’t overmix!
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until you see bubbles forming on the surface, then flip carefully and cook the other side until golden brown.
  7. Remove from the skillet and immediately sprinkle with cinnamon sugar while warm.
  8. Repeat with the remaining batter and serve warm!

Notes

For fluffier pancakes, avoid overmixing the batter; some lumps are okay. Let the batter rest for 5–10 minutes before cooking for a lighter texture.
