Description

A comforting bowl of spicy ground beef stir-fry topped with vibrant garlic veggies and fluffy steamed rice, perfect for busy weeknights.


Ingredients

  • 1/2 pound ground beef
  • 4 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1 teaspoon sesame oil
  • 1 teaspoon brown sugar
  • 1 cup broccoli florets
  • 1/2 red bell pepper, sliced into strips
  • 1/2 zucchini, sliced
  • 1/2 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce (for the veggies)
  • 1 cup steamed white rice

Instructions

  1. Wash and chop all your vegetables. Mince the garlic, and have all your sauces and seasonings at the ready.
  2. In a skillet, heat the sesame oil over medium-high heat, then add the minced garlic. Cook for about 30 seconds until fragrant.
  3. Add the ground beef to the skillet and brown it, breaking it into small pieces as it cooks.
  4. Once browned, stir in the soy sauce, chili flakes, and brown sugar. Let it simmer for 3-4 minutes until slightly thickened, then remove from heat.
  5. In a separate pan, heat olive oil and sauté the garlic for another 30 seconds.
  6. Add the sliced mushrooms first and cook for about 2 minutes.
  7. Toss in the broccoli, zucchini, and red bell pepper. Stir-fry for 4-5 more minutes until the veggies are tender-crisp. Add a splash of soy sauce and toss everything together.
  8. To serve, place hot steamed rice in bowls. Arrange the beef and veggie mixture neatly on top or to the side. Drizzle any remaining sauce over the bowl for extra flavor.

Notes

Consider serving with a sprinkle of sesame seeds or chopped green onions. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
