Ingredients

- Feta cheese (crumbled, around 1 cup)
- Mozzarella cheese (shredded, about 1 cup)
- Whole wheat tortillas (2 large)
- Greek yogurt or tzatziki (for serving)
- Optional: extra vegetables like mushrooms or bell peppers
Instructions
- Heat a skillet over medium heat.
- Place one tortilla onto the skillet and layer it with fresh spinach, crumbled feta, shredded mozzarella, and any additional vegetables.
- Top with another tortilla and let it cook until the bottom is golden brown, about 3-4 minutes.
- Carefully flip the quesadilla over and cook the other side until golden and the cheese is melted, another 3-4 minutes.
- Remove the quesadilla from the skillet, slice it into wedges, and serve with a side of Greek yogurt or tzatziki.
Notes
