  • Greek yogurt or tzatziki (for serving)
  • Optional: extra vegetables like mushrooms or bell peppers

Instructions

  1. Heat a skillet over medium heat.
  2. Place one tortilla onto the skillet and layer it with fresh spinach, crumbled feta, shredded mozzarella, and any additional vegetables.
  3. Top with another tortilla and let it cook until the bottom is golden brown, about 3-4 minutes.
  4. Carefully flip the quesadilla over and cook the other side until golden and the cheese is melted, another 3-4 minutes.
  5. Remove the quesadilla from the skillet, slice it into wedges, and serve with a side of Greek yogurt or tzatziki.
