A delightful twist on a classic appetizer, these spinach dip pinwheels are perfect for any gathering with their creamy filling and flaky pastry.

- 1 bag frozen chopped spinach (10 oz) — fully thawed and drained
- 1 block cream cheese (8 oz) — left at room temperature for easy mixing
- 1/2 cup grated Parmesan — adds a rich, cheesy flavor
- 1/4 cup mayonnaise — for creaminess
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional)
- 1 sheet puff pastry — thawed but still cold
- 1 egg — to brush for that golden finish
Instructions
- In a bowl, combine the softened cream cheese, grated Parmesan, mayo, garlic powder, onion powder, black pepper, and optional red pepper flakes. Fold in the drained spinach until evenly mixed.
- Lightly flour your countertop and roll out the puff pastry sheet. Spread the spinach mixture evenly over the pastry, leaving one long side clear to seal the roll.
- Starting from the filled side, roll the pastry tightly into a log. Wrap it in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat your oven to 400°F (200°C). Remove the log from the fridge and slice it into half-inch rounds. Place them on a parchment-lined baking sheet. Beat the egg with a splash of water and brush the tops of the pinwheels.
- Bake for 15-20 minutes, or until the pinwheels are puffed and golden brown.
Notes
Serve warm or at room temperature with a dipping sauce. Store leftovers in an airtight container for up to 3 days.
