- 1 bag frozen chopped spinach (10 oz) – Thawed and thoroughly drained
- 1 block cream cheese (8 oz) – Left out to soften
- 1/2 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- Pinch of red pepper flakes (optional)
- 1 sheet puff pastry – Thawed but still cold
- 1 egg – For brushing
Instructions
- In a bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, garlic powder, onion powder, black pepper, and red pepper flakes.
- Drain the spinach and fold it into the mixture until evenly combined.
- Dust your counter with flour and roll out the puff pastry.
- Spread the spinach mixture across the pastry, leaving one long edge clear.
- Tightly roll the pastry like a jelly roll.
- Wrap the log in plastic wrap and refrigerate for about 30 minutes.
- Preheat your oven to 400°F.
- Remove from refrigerator, slice into half-inch rounds, and place on a parchment-lined baking sheet.
- Beat the egg with a splash of water and brush it over the tops of the pinwheels.
- Bake for 15-20 minutes or until golden brown.
Notes
Chill the dough for easier slicing and crispy layers. Drain the spinach well to avoid soggy filling. Experiment with different cheeses for unique flavors.
