- 1 bag frozen chopped spinach (10 oz) – thawed and squeezed dry
- 1 block cream cheese (8 oz) – at room temperature
- 1/2 cup grated Parmesan cheese
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- A pinch of red pepper flakes (optional for heat)
- 1 sheet puff pastry – thawed but still cold
- 1 egg – for egg wash
Instructions
- Start by grabbing a mixing bowl. Combine the soft cream cheese, grated Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Stir until it’s smooth and well-blended.
- Take your thawed spinach and squeeze out every last drop of water. Add it to the bowl and mix everything thoroughly to ensure even distribution.
- Lightly flour your countertop, then unroll the puff pastry. Spread the spinach mixture evenly across the pastry, leaving one long edge bare for sealing.
- Carefully roll the pastry up, jelly-roll style, keeping it tight and uniform. Wrap the log tightly in plastic wrap and refrigerate for 30 minutes to firm it up.
- Preheat your oven to 400°F while you wait.
- Once chilled, slice the log into half-inch rounds and place them on a parchment-lined baking sheet.
- Beat the egg with a splash of water and brush it on top of each pinwheel.
- Bake for 15-20 minutes, or until they puff up and turn golden brown.
