- 1 cup ricotta cheese
- 1 cup fresh spinach, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1/2 cup breadcrumbs (plus extra for coating)
- Olive oil spray
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, garlic powder, salt, pepper, and the egg. Mix until everything is well incorporated.
- Stir in 1/2 cup of breadcrumbs to form a sticky dough. If the mixture is too wet, add more breadcrumbs until you achieve the right consistency.
- Form small balls, about 1-2 inches in diameter, rolling each one in extra breadcrumbs for a crispy coating.
- Place the balls on the baking sheet, spacing them slightly apart. Give them a light spray of olive oil for that golden finish.
- Bake for 15-20 minutes, turning halfway through, until they are crispy and golden brown.
- Serve warm, optionally with marinara sauce for dipping.
Notes
Ensure that the spinach is well-drained to avoid overly moist bites. Experiment with different cheese blends for a unique flavor.
