  • 1 cup fresh spinach, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/2 cup breadcrumbs (plus extra for coating)
  • Olive oil spray

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ricotta cheese, chopped spinach, Parmesan cheese, garlic powder, salt, pepper, and the egg. Mix until everything is well incorporated.
  3. Stir in 1/2 cup of breadcrumbs to form a sticky dough. If the mixture is too wet, add more breadcrumbs until you achieve the right consistency.
  4. Form small balls, about 1-2 inches in diameter, rolling each one in extra breadcrumbs for a crispy coating.
  5. Place the balls on the baking sheet, spacing them slightly apart. Give them a light spray of olive oil for that golden finish.
  6. Bake for 15-20 minutes, turning halfway through, until they are crispy and golden brown.
  7. Serve warm, optionally with marinara sauce for dipping.
