- Jumbo pasta shells
- Ricotta cheese
- Fresh spinach (chopped)
- Mozzarella cheese (divided)
- Parmesan cheese (grated)
- 1 Egg
- Marinara sauce
- Salt
- Pepper
- Olive oil (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the jumbo pasta shells according to package instructions, then drain and set aside.
- In a large bowl, mix together the ricotta cheese, chopped spinach, half of the mozzarella cheese, grated parmesan cheese, egg, salt, and pepper until thoroughly combined.
- Spoon the cheese mixture into each pasta shell and place them in a baking dish.
- Pour marinara sauce over the stuffed shells, then top with the remaining mozzarella cheese.
- Drizzle with olive oil if desired.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Serve warm and enjoy your delicious vegetarian dinner!
Notes
You can substitute fresh spinach with frozen spinach, just make sure to thaw and drain it well. For added flavor, consider mixing in other cheeses like feta or goat cheese.
