Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 1 tablespoon olive oil
  • 1 lb sausage (Italian or smoked, sliced)
  • 2 cups fresh spinach
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned.
  3. Add garlic and spinach to the skillet, cooking until spinach wilts.
  4. Pour in heavy cream and bring to a gentle simmer.
  5. Stir in the Parmesan cheese until melted and smooth.
  6. Add the cooked pasta to the skillet, tossing to combine.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with parsley if desired.
