  • 4 oz cream cheese
  • 1 cup shredded mozzarella (or your favorite cheese)
  • 2 cloves garlic (optional)
  • Salt and pepper (to taste)
  • Olive oil (for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine chopped spinach, cream cheese, and mozzarella, mixing well. Season with salt, pepper, and optional garlic.
  3. Carefully slice a pocket into each chicken breast without cutting all the way through.
  4. Stuff each pocket generously with the spinach mixture.
  5. Secure the openings with toothpicks or kitchen twine and drizzle with olive oil.
  6. Place the chicken in a baking dish and bake for about 25-30 minutes, or until the chicken is fully cooked and juices run clear.
  7. Allow to rest for a few minutes before removing the toothpicks and slicing.
