- 2 cups fresh spinach (or 1 cup frozen, thawed)
- 4 oz cream cheese
- 1 cup shredded mozzarella (or your favorite cheese)
- 2 cloves garlic (optional)
- Salt and pepper (to taste)
- Olive oil (for drizzling)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine chopped spinach, cream cheese, and mozzarella, mixing well. Season with salt, pepper, and optional garlic.
- Carefully slice a pocket into each chicken breast without cutting all the way through.
- Stuff each pocket generously with the spinach mixture.
- Secure the openings with toothpicks or kitchen twine and drizzle with olive oil.
- Place the chicken in a baking dish and bake for about 25-30 minutes, or until the chicken is fully cooked and juices run clear.
- Allow to rest for a few minutes before removing the toothpicks and slicing.
