- ½ cup shredded mozzarella cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
- Optional: Parmesan cheese for an extra touch of flavor
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat a drizzle of olive oil over medium heat. Add minced garlic and cook until fragrant, about 30 seconds.
- Add spinach to the skillet and stir until wilted. Remove from heat and let cool.
- In a bowl, mix the cooked spinach, ricotta, and mozzarella. Season with salt and pepper.
- Carefully slice each chicken breast lengthwise to create a pocket for the filling.
- Stuff each chicken breast generously with the spinach mixture and secure with toothpicks if needed.
- In an oven-safe pan, heat olive oil over medium-high heat. Sear the chicken breasts on both sides until golden brown, approximately 4-5 minutes per side.
- Transfer the pan to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
- Allow to rest for 5 minutes before serving.
