 - 1 cup crushed hard candy (such as Jolly Ranchers)
 
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
 - In a medium bowl, whisk together the flour, baking powder, and salt, then set aside.
 - In another bowl, cream together the softened butter and granulated sugar until the mixture is fluffy.
 - Beat in the egg and vanilla extract until fully incorporated.
 - Gradually add the dry ingredients, mixing until just combined. Avoid overmixing to keep the cookies tender.
 - Roll out the dough on a floured surface to about 1/4 inch thick. Use cookie cutters to create fun shapes.
 - With a smaller cutter, cut out the center of each cookie and fill the cavity with crushed hard candy.
 - Place the cookies on the prepared baking sheet, spacing them about an inch apart.
 - Bake for 8-10 minutes or until the edges are lightly golden and the candy is melted.
 - Allow the cookies to cool completely on the baking sheet before removing them.
 
Notes
Dust with powdered sugar before serving for an extra touch. These cookies can be stored in an airtight container for up to a week.
