Ingredients

  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup vegetable oil
  • 2 tbsp unsalted butter, melted
  • 2 tbsp lemon zest (about 2 lemons)
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 cup powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)
  • Optional: 1/2 tsp lemon zest (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, whisk the eggs and granulated sugar until smooth. Add sour cream, vegetable oil, and melted butter; mix until combined. Stir in lemon zest, lemon juice, vanilla extract, and lemon extract.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just incorporated.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  7. In a small bowl, mix together powdered sugar and 2-3 tablespoons of lemon juice until smooth for the glaze.
  8. Drizzle the glaze over the cooled loaf and garnish with additional lemon zest if desired.
  9. Slice and serve the loaf with your favorite beverage.

Notes

For best results, use room temperature ingredients and feel free to add poppy seeds or other fruits for a twist.
