- 1 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup vegetable oil
- 2 tbsp unsalted butter, melted
- 2 tbsp lemon zest (about 2 lemons)
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 1 cup powdered sugar
- 2–3 tbsp fresh lemon juice (for glaze)
- Optional: 1/2 tsp lemon zest (for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- In a large mixing bowl, whisk the eggs and granulated sugar until smooth. Add sour cream, vegetable oil, and melted butter; mix until combined. Stir in lemon zest, lemon juice, vanilla extract, and lemon extract.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just incorporated.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- In a small bowl, mix together powdered sugar and 2-3 tablespoons of lemon juice until smooth for the glaze.
- Drizzle the glaze over the cooled loaf and garnish with additional lemon zest if desired.
- Slice and serve the loaf with your favorite beverage.
Notes
For best results, use room temperature ingredients and feel free to add poppy seeds or other fruits for a twist.
