- 1 inch ginger, grated

Instructions
- Cook the rice according to package instructions and set aside.
- In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until well combined.
- In a large skillet over medium heat, cook the diced chicken until browned and cooked through, about 6-8 minutes.
- Pour the sauce over the chicken, stirring to coat evenly.
- Allow the mixture to simmer for 3-5 minutes until the sauce thickens slightly.
- Serve the chicken over the cooked rice, garnished with chopped green onions and sesame seeds.
