Description

A quick and delicious dinner idea featuring tender chicken coated in a savory-sweet sauce served over fluffy rice.


Ingredients

  • 2 cups cooked rice (any variety: white, brown, or jasmine)
  • 1 lb chicken breast, diced
  • 1/4 cup soy sauce (low-sodium recommended)
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the sauce.
  2. Heat a skillet over medium heat and cook the diced chicken for about 7-10 minutes until it’s no longer pink and fully cooked.
  3. Once the chicken is ready, pour the sauce over it and cook for another 2-3 minutes until well-coated and bubbling.
  4. Spoon the sticky chicken over your cooked rice and finish with a sprinkle of green onions and sesame seeds for garnish.

Notes

For a vegetarian option, substitute tofu for chicken. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 2 months.
