Ingredients

- 2 cups cooked rice (any variety: white, brown, or jasmine)
- 1 lb chicken breast, diced
- 1/4 cup soy sauce (low-sodium recommended)
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- Green onions, for garnish
- Sesame seeds, for garnish
Instructions
- In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to make the sauce.
- Heat a skillet over medium heat and cook the diced chicken for about 7-10 minutes until it’s no longer pink and fully cooked.
- Once the chicken is ready, pour the sauce over it and cook for another 2-3 minutes until well-coated and bubbling.
- Spoon the sticky chicken over your cooked rice and finish with a sprinkle of green onions and sesame seeds for garnish.
Notes
For a vegetarian option, substitute tofu for chicken. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 2 months.
