Stir-Fried Bok Choy with Ground Meat

  • Total Time: 25 minutes
  • Yield: 4 servings 1x
  • Diet: Paleo

Description

A quick and budget-friendly stir-fry, combining the earthy crunch of bok choy with hearty ground meat for a wholesome weeknight meal.

Ingredients

Scale
  • 2 tablespoons vegetable oil
  • 1 pound ground meat (chicken, beef, or turkey)
  • 4 cups bok choy, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the ground meat to the skillet and cook until browned, breaking it apart as it cooks.
  3. Stir in the garlic and sauté for about 30 seconds until fragrant, being careful not to burn.
  4. Add the chopped bok choy and stir-fry for 3-4 minutes until wilted but still crunchy.
  5. Pour in the soy sauce and oyster sauce, mixing well, and season with salt and pepper to taste.
  6. Serve hot over cooked rice.

Notes

For a meatless version, swap the ground meat for a plant-based alternative. You can also add chili flakes for extra heat or incorporate additional vegetables like bell peppers and carrots.
