  • 2 3/4 cups (344 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla extract
  • 1/4 cup (50 g) granulated white sugar (for rolling dough)

Instructions

  1. Prepare the Cheesecake Filling: In a mixing bowl, beat the cream cheese, 3 tbsp sugar, and 1/2 tsp vanilla together until smooth and creamy. Set it aside to chill.
  2. Make the Strawberry Jam: In a small pot, combine diced strawberries with 1/4 cup sugar. Cook over medium heat until the strawberries break down and the mixture thickens. Set aside to cool.
  3. Prepare the Cookie Dough: In a large bowl, cream together softened butter and 1 cup sugar until light and fluffy. Add in the egg and 2 tsp vanilla, mixing until well incorporated.
  4. Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this to the butter mixture until just combined.
  5. Assemble Cookies: Preheat your oven to 350°F (175°C). Take a tablespoon of dough, flatten it in your hand, and place a teaspoon of cheesecake filling and a bit of strawberry jam in the center. Wrap the dough around the filling and roll it into a ball. Roll the ball in the remaining 1/4 cup of sugar.
  6. Bake: Place the balls on a lined baking sheet and bake for 12-15 minutes until the edges are golden. Allow them to cool before serving.
