Description
A delightful fusion of two beloved desserts, these soft and chewy cookies encapsulate the creamy richness of cheesecake with the fruity brightness of strawberries.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup cream cheese, softened
- 1/2 cup strawberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually incorporate these dry ingredients into the wet mixture until just combined.
- Gently fold in the softened cream cheese until well blended into the dough.
- Using a tablespoon, drop mounds of dough onto a prepared baking sheet, making an indentation in the center of each cookie.
- Fill each indentation with strawberry jam.
- Bake for 10-12 minutes or until the edges turn lightly golden.
- Allow the cookies to cool on the baking sheet before transferring them to a wire rack.
Notes
For variations, you can substitute strawberry jam with other fruit jams or chocolate spread. Cookies are best served at room temperature.
