A unique dish combining tender chicken breasts with the sweet flavors of strawberry jam and balsamic vinegar for a delightful culinary experience.
Ingredients

- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- ½ teaspoon sea salt
- ¼ cup strawberry jam
- 1 tablespoon good quality balsamic vinegar
- 1 tablespoon water (add more if the mixture is too thick)
- ¼ cup fresh basil leaves, cut into ribbons or finely chopped
- 2 tablespoons crumbled goat cheese (optional)
- ¼ cup fresh strawberries, sliced (optional)
Instructions
- In a medium skillet, heat the olive oil over medium-high heat.
- Season both sides of the chicken breasts with sea salt and place them in the hot skillet.
- Cook for approximately 4-5 minutes on one side until a lovely golden crust forms.
- Flip the chicken and continue cooking for another 4-5 minutes, ensuring it’s fully cooked through.
- In a separate bowl, whisk together strawberry jam, balsamic vinegar, and water.
- When the chicken is nearly cooked, pour the sauce over the breasts, using a spatula to scrape any delicious brown bits from the bottom of the pan.
- Reduce the heat and let the sauce simmer for 2-3 minutes until slightly thickened.
- Stir in most of the basil and let simmer for one more minute.
- Remove the chicken from the pan, pour the sauce over each piece, sprinkle with goat cheese if using, and garnish with remaining basil and sliced strawberries.
Notes
Great served over quinoa or with roasted vegetables. Store leftovers in an airtight container for up to three days.
