- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- ½ teaspoon sea salt
- ¼ cup strawberry jam
- 1 tablespoon good quality balsamic vinegar
- 1 tablespoon water (more if sauce is too thick)
- ¼ cup fresh basil leaves (chopped or in ribbons)
- 2 tablespoons crumbled goat cheese (optional)
- ¼ cup fresh strawberries (sliced, optional)
Instructions
- Heat the olive oil in a medium skillet over medium-high heat.
- Season both sides of the chicken breasts with sea salt.
- Place the chicken in the hot skillet and cook for about 4-5 minutes on one side until golden. Flip and cook for another 4-5 minutes until fully cooked.
- Meanwhile, whisk the strawberry jam, balsamic vinegar, and water together in a small bowl, adjusting water as needed.
- Once the chicken is almost finished cooking, pour the sauce over the chicken and scrape up any brown bits from the pan.
- Reduce the heat and let the sauce simmer for 2-3 minutes until thickened, stirring in most of the fresh basil.
- Remove the chicken from the pan and pour the sauce over it. Garnish with goat cheese, remaining basil, and sliced strawberries if desired.
Notes
For added flavor, serve with quinoa, mashed potatoes, or a fresh salad. Leftovers can be stored in an airtight container for up to 3 days.
