- 6 cups fresh mixed greens (washed and thoroughly dried)
- 2 cups fresh strawberries (hulled and sliced)
- 1 cup crumbled feta cheese
- 1/2 cup pecans (roughly chopped)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup fresh mint leaves (chopped)
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Toast the pecans: Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them for 5-7 minutes until fragrant. Make sure to let them cool afterward.
- Make the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.
- Prep the produce: Hull and slice the strawberries, thinly slice the red onion, and chop the mint leaves.
- Assemble the salad: In a large bowl, layer the mixed greens, sliced strawberries, toasted pecans, red onion, crumbled feta cheese, and chopped mint.
- Dress and toss: Right before serving, pour the dressing over the salad and gently toss everything together. Serve immediately for the best texture.
Notes
For a nut-free version, substitute pecans with sunflower seeds or leave them out entirely. Good with grilled proteins or hearty grains.
