Ingredients

  • 6 cups fresh mixed greens (washed and thoroughly dried)
  • 2 cups fresh strawberries (hulled and sliced)
  • 1 cup crumbled feta cheese
  • 1/2 cup pecans (roughly chopped)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh mint leaves (chopped)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Toast the pecans: Preheat your oven to 350°F (175°C). Spread the pecans on a baking sheet and toast them for 5-7 minutes until fragrant. Make sure to let them cool afterward.
  2. Make the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper. Set aside.
  3. Prep the produce: Hull and slice the strawberries, thinly slice the red onion, and chop the mint leaves.
  4. Assemble the salad: In a large bowl, layer the mixed greens, sliced strawberries, toasted pecans, red onion, crumbled feta cheese, and chopped mint.
  5. Dress and toss: Right before serving, pour the dressing over the salad and gently toss everything together. Serve immediately for the best texture.

Notes

For a nut-free version, substitute pecans with sunflower seeds or leave them out entirely. Good with grilled proteins or hearty grains.
