Delicious and healthy Strawberry Oatmeal Bars, perfect for breakfast, snacks, or dessert.
Ingredients

- 2 cups rolled oats
- 1 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups fresh or frozen strawberries, chopped
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a mixing bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt. Stir until well incorporated.
- Press half of the oat mixture firmly into the bottom of your prepared pan.
- Toss the chopped strawberries with cornstarch and lemon juice and spread this mixture evenly over the crust.
- Crumble the remaining oat mixture over the strawberry layer.
- Bake for 25-30 minutes, or until the top is golden brown and fragrant.
- Allow the bars to cool completely before lifting them out of the pan and slicing them into bars.
Notes
Serve with Greek yogurt or additional maple syrup. Store in an airtight container for up to 3 days, or refrigerate for a week. Can be frozen for up to 3 months.
