A refreshing and creamy dessert combining strawberries and chia pudding, perfect for warm days or special gatherings.
Ingredients

- 1 can light coconut milk
- 1/2 cup unsweetened vanilla almond milk
- 1/4 cup + 2 tablespoons chia seeds
- 4 scoops Vital Proteins Collagen Peptides (optional)
- 1 cup raw macadamia nuts
- 1/3 cup shredded coconut
- Dash of fine sea salt
- 1 lb fresh strawberries, thinly sliced (reserve 3–4 whole ones for garnish)
Instructions
- In a medium bowl, whisk the coconut milk, almond milk, chia seeds, and collagen powder (if using) until well combined.
- Cover the bowl and let it chill in the fridge for at least 120 minutes or overnight.
- For the shortcake layer, place the macadamia nuts, shredded coconut, and sea salt in a food processor and pulse until crumbly.
- Thinly slice the strawberries and reserve a few whole ones for garnish.
- Once the chia pudding is set, layer it in mason jars with strawberries and shortcake crumble.
- Top each jar with a mound of shortcake crumble and a whole strawberry.
