Description

A refreshing and creamy dessert combining strawberries and chia pudding, perfect for warm days or special gatherings.


Ingredients

  • 1 can light coconut milk
  • 1/2 cup unsweetened vanilla almond milk
  • 1/4 cup + 2 tablespoons chia seeds
  • 4 scoops Vital Proteins Collagen Peptides (optional)
  • 1 cup raw macadamia nuts
  • 1/3 cup shredded coconut
  • Dash of fine sea salt
  • 1 lb fresh strawberries, thinly sliced (reserve 34 whole ones for garnish)

Instructions

  1. In a medium bowl, whisk the coconut milk, almond milk, chia seeds, and collagen powder (if using) until well combined.
  2. Cover the bowl and let it chill in the fridge for at least 120 minutes or overnight.
  3. For the shortcake layer, place the macadamia nuts, shredded coconut, and sea salt in a food processor and pulse until crumbly.
  4. Thinly slice the strawberries and reserve a few whole ones for garnish.
  5. Once the chia pudding is set, layer it in mason jars with strawberries and shortcake crumble.
  6. Top each jar with a mound of shortcake crumble and a whole strawberry.
