- 1 ½ cups fresh or frozen strawberries, hulled
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- ¼ cup heavy cream
Instructions
- Make the Strawberry Sauce: Combine the strawberries, sugar, and lemon juice in a small saucepan over medium heat. Cook until softened, about 5-7 minutes. Mash into a puree, stir in the cornstarch slurry, and cook until thickened. Cool completely.
- Prepare the Crust: Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes and set aside to cool.
- Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla, sour cream, and heavy cream until combined.
- Combine Everything: Pour cheesecake filling onto crust. Swirl in cooled strawberry sauce.
- Bake: Place in a water bath and bake for 55-65 minutes until edges are set but center jiggles slightly.
- Cool: Turn off oven and crack door for an hour. Cool completely, then refrigerate for at least 6 hours.
- Serve: Run a knife around edges of the pan and release the springform. Slice and serve with remaining strawberry sauce.
Notes
Serve with whipped cream and mint. Store covered in the refrigerator for up to a week.
