Ingredients

  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt

  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)

Instructions

  1. Prep the ingredients by grilling or roasting the chicken and corn if needed. Allow them to cool, then chop everything into bite-sized pieces.
  2. Make the dressing by combining the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper in a large bowl. Stir until smooth.
  3. Mix it up by adding the diced chicken, sweet corn, cucumber, and red onion to the bowl. Toss gently until everything is well coated in the dressing.
